When I was kid (before cable food channels) I loved watching PBS food shows! My dad used to joke with me about “Arte Culinario” (Culinary Art),  in spanish it sounds pretty funny, especially to a kid! I went to FIU first, but had it in me to join the pastry world so I went for it.

I enrolled in Johnson & Wales University and studied Baking & Pastry Art. I then traveled within the U.S., Caribbean and Mexico with the worldwide French resort company, Club Med and had the time of my life before I returned to Florida International University and obtained a Bachelor’s degree from the renowned Chaplin School of Hospitality & Tourism Management.

I later moved on to work with Master Chef Marc Ehrler at the Loews Miami Beach Hotel, as well as some local pastry greats, Chef Jordi Panisello (best pastry chef in South Florida) and Michel Chiche, from whom I learned so much about flavor, texture, technique and production.  In my involvement with the South Beach Wine & Food Festival, headquartered at the Loews, I also worked with some pastry greats such as Chefs Pierre Hermé & Francois Payard and local French MOF Master Chef Georges Berger. I later became pastry chef for China Grill Miami Beach & Ft. Lauderdale locations for almost 6 years.

Choco-Chica Cupcakes & Cookies & Cakes is my long-time goal and ideal evolution within the industry. I wish to grow my small company into a shop offering an array of pastry items, classes and activities for kids.
